In a cocktail shaker add gin, simple syrup, lime juice and bitters with ice. Shake and strain into chilled coupe glass and garnish with rose petals or lime wheel.
Combine 1 cup granulated sugar and 1 cup water in a pot over low heat until dissolved. Introduce 1 cup rose petals folding into liquid until fully saturated. Simmer (never boil) for 12-15 minutes. Fine strain and chill. Good up to two weeks
