Long before G&Ts were a fan favorite, India was brewing tonics. These tonics, which incorporated roots, spices, and herbs, come from Ayurveda, one of the world’s oldest healing systems. They were used to help balance the body, from supporting digestion to boosting immunity against malaria. That protection against malaria is largely due to quinine, one of tonic’s key ingredients, which has a bitter flavor. Citrus and sugar helped make tonic more palatable. The British Navy combined tonic water with gin, giving birth to the classic cocktail.
