One of Mexico’s most popular drinks has mysterious origins; there are plenty of stories of its origins, from being created at Jalisco’s oldest bar to being named after 1860s Mexican folk songs. But the joy it provides is easy to understand: it’s a bright and refreshing blend of tequila, lime, salt, and grapefruit soda. Our Paloma recreates those flavors without any alcohol, drawing on the years we spent perfecting our award-winning grapefruit soda. This is a potion for when you’re feeling luminous.
We use red and pink grapefruit juice for greater complexity, blending tartness and sweetness. That’s mixed with a little capsaicin (the substance that makes peppers spicy). Don’t worry; there’s no heat. Just interesting notes and plenty of depth to be enjoyed at your next rooftop party.
Good things may come to those who wait, but great things come to those who experiment, and we don’t stop until we create products we can’t wait to rave about. All of our mocktails begin with our potion brewer putting pen to paper for weeks or months to create a formula we’re proud of. Our team’s collective experiences, preferences, and travels play into these flavors, evoking different moods and settings.
We test it out in small batches first, gathering feedback from our team, before brewing larger quantities and carbonating at high altitudes. We take good drinks seriously and built our own lab. Doing everything in-house affords us greater control over the final product. This results in crisp mouthfeel and champagne-sized bubbles.
